Mi Cocina restaurant is one of the inland empire’s best small business success stories. The family owned establishment opened in 11 and has grown by leaps and bounds. Business has increased so much that owners Carlos and Margaret Lopez have moved the restaurant to a larger location in the San Manuel village shopping center in highland in 2011.
The new space is twice the size of the old restaurant, and also features a bra, outside patio seating and private banquet room, says Norma Arroyo, the restaurant’s manager and the daughter of Carlos and Margaret.
The expansion has been a long time coming and will take Carlos and Margaret’s original dream of restaurant ownership to a new level.
Carlos and Margaret are proud that Mi Cocina is a warm and welcoming place where locals can meet friends and enjoy delicious homemade food. It took untold hours of hard work to achieve that goal but it has been worth the effort.
Now, Norma and her brother, Armando Arroyo, are taking over much of the work with the hope that their parents can soon retire and start enjoying their golden years.
Along with Mi Cocina’s stellar service, Norma says the recipes have not changed nor will they in the future. Here father and her uncle Pedro – Head Chef – created all of them and tested each one until they were satisfies with the taste.
